What do you enjoy cooking at home that you do not cook in the restaurant? Do you have a “comfort” food?

-I love to make very simple vegetable pastas and my absolute favorite thing to cook is anything from the sea!


Spring has finally arrived and Summer is approaching!  What are you most excited about as it relates to food and the change in seasons?

-I love the challenge that the short spring season presents; a couple of weeks for ramps, a couple of weeks for morel mushrooms, and so on. You only have so many weeks to harvest, cook and enjoy these spring and summer treasures.


What culture is most influential in your style of cooking?

-I went to a french culinary school and have worked mostly in Italian restaurants. Applying these classic philosophies to local fare is my favorite go-to. 


What dish are you most proud of?

-My great-grandmother’s cranberry pudding is a very ‘old school’ dessert recipe that I love to make whenever it is appropriate in a restaurant. 


Is there a particular moment in time, person, or place that inspired you to become a chef?

-Growing up on an organic farm outside of Pittsburgh, I just fell in love with food that tastes good and fresh! Nothing compares.
