RECIPE | Rustic Apple Gallette

A warm and comforting dessert that’s easier than pie and even more delicious! 


Apple Galette


Flaky Cream Cheese Pie Crust:

8 tbsp. cold unsalted butter (cut in pieces)

1 1/3 cup + 4 tsp. flour

¼ tsp. salt

1/8 tsp. baking powder

3 oz. cold cream cheese

2 tbsp. heavy cream

1 ½ tsp. apple cider vinegar

For the Filling:

4 apples (peeled, sliced & cored)

2 tsp. lemon juice

¼ cup sugar

2 tbsp. unsalted butter


For the Crust:

Place the flour, salt & baking powder in food processor and pulse to combie. Cut cream cheese into 3 pieces and add it to the flour. Pulse until flour resembles coarse meal. Add cold butter pieces and pulse until pea size. Add liquids and pulse until butter is broken into small pieces. Wrap in plastic, press into disc shape and chill for at least 1 hour.

For the Galette:

Pre-heat oven to 400˚. On a floured surface, roll the dough into a 16” circle. Transfer to a parchment lined baking sheet. Toss the apple slices with the lemon juice and sugar. Place the apples in the center of the dough. Fold the overhanging dough to the outer edge of the apples, pleating as you go. It should look rustic and imperfect. Brush the dough with a little water and sprinkle some sugar on the dough. Dot the apples with the butter. Bake for 40 minutes or until the apples are tender and the crust is crisp!
